THE MAIN DISADVANTAGE OF THE AIRBLAST TUNNEL IS THE HIGH LABOUR REQUIREMENT. ONE OF THE ALTERNATIVES IS MECHANICAL FREEZING IN PLATE FREEZERS OR AIRBLAST FREEZING TUNNELS WITH AUTOMATIC CONVEYING SYSTEMS. THE RELEVANT EQUIPMENT IS DESCRIBED. IN ADDITION, ATTENTION IS PAID TO THE SELECTION OF FREEZING METHOD AND TO SOME ASPECTS OF FREEZING FOODSTUFFS, SUCH AS FREEZING TIME AND ECONOMICS.
