THE RELATIONSHIP BETWEEN RESISTANCE-SPECIFIC VOLUME AND TEMPERATURE FOR THE VARIOUS COMPONENTS OF UNBONED RAW MEAT WAS STUDIED FOR A TEMPERATURE RANGE OF 273 TO 193 K (0 TO -80 C). THE AA. DISCUSS THE RESULTS WHICH MADE IT POSSIBLE TO DETERMINE THE PREFERENTIAL TEMPERATURES OF THE SEPARATION OF THE VARIOUS COMPONENTS FROM ONE ANOTHER AND WHICH CAN BE USED FOR ESTABLISHING THE PROGRAMMES OF OPERATION FOR THE ELECTRICAL SEPARATORS USED.
