Summary
In order to ensure quality at manufacturing level and staff comfort, the food industry is seeking to optimize its ambient air-conditioning systems. This article presents the advantages and limits of individual air-conditioning units and central air conditioning. For air diffusion, textile ducts and air displacement are compared. The benefits of localized protection of sensitive areas are also described. Examples provided: pork products manufactured under conditions of dehumidified air and butter manufactured under conditions of central air conditioning. Also presented: a new generation of ultra-clean air conditioners used in cheese factories.
