ENERGY USAGE AND WEIGHT LOSS IN BEEF AND PORK CHILLING.

Author(s) : COLLETT P., GIGIEL A. J.

Summary

THE ENERGY USAGE IN BEEF AND PORK CHILLING HAS BEEN MEASURED IN FIVE UK ABATTOIRS. FOR BEEF IT RANGED FROM 44 TO 150 KILOJ/KG AND FOR PORK FROM 89 TO 258 KILOJ/KG. WEIGHT LOSS DURING BEEF CHILLING RANGED FROM 1.3 TO 1.7% AND DURING PORK CHILLING FROM 1.85 TO 3.5%. THE LOSS IN VALUE DUE TO WEIGHT LOSS WAS MUCH LARGER THAN THE COST OF THE ENERGY USED IN CHILLING. IF ACHIEVABLE ENERGY CONSUMPTION AND WEIGHT LOSS OF 96 KILOJ/KG AND 1.85% FOR PORK AND 140 KILOJ/KG AND 1.5% FOR BEEF WERE REALIZED, 105 TJ OF ELECTRICAL ENERGY WITH C 1.2 M COULD BE SAVED AND LOSSES OF C 22.1 M DUE TO EXCESSIVE WEIGHT LOSS COULD BE AVOIDED.
