Summary

The authors describe a simple and rapid method for recovering Listeria monocytogenes that has been severely injured by heat, for example during milk pasteurization. They describe the operations (carried out under anaerobic conditions) and the additives (oxyrase, lactate and cysteine) that make possible complete revival of Listeria after 5 minutes of treatment at 62.8 deg C in raw milk.
