Summary
The evolution of the meat processing industry in New Zealand is reviewed, particularly with regard to environmental impacts. Despite great progress in waste reduction and by-product recovery and processing, meat processing continues to produce large amounts of waste. Considerable waste reduction opportunities therefore exist. Environment-related procedures and standards are influenced by the need for cost-effectiveness in an international context; the need to comply with national regulations as well as those of importing countries; and a variety of commercial quality requirements. Under new legislation, New Zealand meat processors are required to prepare and implement risk management programmes.
