Summary

A cultivar of spinach grown commercially in Brazil had beta-carotene 489, lutein and violaxanthin 1025, zeaxantina 182 and neoxanthin 49 microgrammes/g. After drying in air and freeze-drying, beta-carotene decreased by about 12% but other values did not decrease and neoxanthin showed a significant increase.
