Summary

THE FLESH OF EDIBLE OYSTER CRASSOSTREA MADRASENSIS (PRESTON) WAS FREEZE-DRIED. THE BIOCHEMICAL, MICROBIOLOGICAL AND SENSORY EVALUATION OF THE FRESH AS WELL AS THE FREEZE-DRIED SAMPLE WERE DETERMINED. THERE WERE NO CHANGES IN THE TRIMETHYLAMINE, TOTAL VOLATILE NITROGEN, PEROXIDE VALUE AND FREE FATTY ACIDS AS A RESULT OF FREEZE-DRYING. THE PROXIMATE COMPOSITION WAS NOT ALTERED.
