Summary

There is no doubt that ethylene is toxic for fruit and vegetables during cold storage under air-cooling or controlled-atmosphere conditions. It exerts numerous damaging effects during storage and when products are returned to ambient conditions. How ethylene is biosynthesized is is well-known, but its mechanism of action is not fully understood.
