Summary
RESULTS OF A STUDY OF THE QUALITY OF TUNA FROZEN WITH VARIOUS METHODS. IT WAS ESTABLISHED THAT THE USE OF LIQUID NITROGEN FOR INTENSIFYING THE REFRIGERATION OF TUNA DECREASES FREEZING TIME BY ABOUT 5 TIMES COMPARED TO THE INDUSTRIAL CYCLE. IN ADDITION, THE SALT CONTENT OF MEAT DECREASES BY 2 TO4 TIMES COMPARED TO THE CONTROL AND FROZEN STORAGE LIFE INCREASES BY 2.5 TO 3 TIMES.
