THE ARTICLE DEALS WITH REFRIGERATED PRECOOKED DISHES WHOSE SHELF LIFE, IN FRANCE, IS LIMITED TO 6 DAYS BY A MINISTERIAL DECREE, EXCEPT IF DEROGATION IS ACCORDED, CASE BY CASE, BY THE VETERINARY SERVICES. THE AUTHORS DESCRIBE THE PROCESSES USED AND QUOTE EXAMINATIONS, CONTROLS AND ANALYSES CARRIED OUT, AS WELL AS THE MOST FREQUENT REASONS FOR REJECTING ABOUT 20% OF THE REQUESTS FOR EXTENSIONS. PARTICULARLY EMPHASIS IS LAID ON THE ORGANOLEPTIC AND MICROBIOLOGICAL CHARACTERISTICS OF PRODUCTS WHICH BENEFIT FROM2 TECHNIQUES (MODIFIED ATMOSPHERE AND VACUUM PACKAGING) THAT HAVE RECENTLY ENABLED A SIGNIFICANT INCREASE IN THE NUMBER OF EXTENSION AUTHORIZATIONS ACCORDED UP TO 21 DAYS OR MORE.
