Summary

The growth in the frozen food market in the USA is highlighted, from 400 million lb in 1942 (mostly commodities such as vegetables and fruits), to 12 billion lb in 1991. The total prepared food market value in 1991 was estimated at $11 billion, rising to $13 billion by 1995. Frozen products sold through warehouses and price clubs is expected to reach $745 million by 1995. Retailers have had to expand shelf space to meet the demand for 1000 new products per year. Frozen breakfasts, the food service market and healthy foods are all growth areas. The development of packaging to meet retail demands (including the use of microwave ovens) and more recently environmental pressures, is also discussed together with the potential for world growth in frozen food consumption.
