THE EFFECT OF COMPOSITION OF THE JUICE ON THE FLOW BEHAVIOUR IS DISCUSSED. THE RESULTS OF PREVIOUS STUDIES ARE REVIEWED. THE AUTHORS' RESULTS OF STUDIES ON THE FLOW BEHAVIOUR OF CONCENTRATED JUICES OVER A RANGE OF TEMPERATURES FROM 268 TO 313 K (-5 TO 40 DEG C) ARE GIVEN.
