Summary

The history of food refrigeration in Japan was summarized; the domestic demand for rice decreased during the early 1960s, as growth in dispensable income shifted consumption patterns away from cereals towards non-cereal foods. Rapid progress in refrigerated food production during the 1960s was investigated on the basis of the social evolution of women and developments in cooking appliances. Consumer-oriented refrigeration science and technology will be required to develop the global food supply system for an ageing society.
