Food losses during refrigerated transport: a socio-economic analysis.

Summary
Food is lost or wasted worldwide throughout the supply chain, from initial agricultural production down to final household consumption. Thanks to the possibility of reducing bacterial growth in perishables goods through refrigeration, refrigerated transport represents a key element in the cold chain to reduce food losses and preserving its quality at all stages. International, European and French regulations impose obligations of means and results. During distribution of perishable goods, carriers must comply with the temperatures set by the regulations. These temperatures are fixed for the internal environment of the vehicle and the delivered products. This paper presents a socio-economic analysis of the losses during the refrigerated transport. With the aim of identifying the critical points encountered during transport, a wide population of carriers is called to respond to an ad-hoc created survey. This survey connects the problem of food losses to the maintaining of the correct temperature through the assessment of temperature excursions, their frequency and their costs. Results of this survey, already available for more than thirty carriers, are presented in this paper.
