Summary

The importance of the cold chain for the Moroccan food industry is outlined and considers its two main functions: supplying the population and exports, together with related quality criteria. The requirements for a cold chain, from industrial equipment to household appliances, as well as recent developments of installations are presented. 50% of freezing plants remain under state control, but in refrigeration, generally 80% are now in the private sector. Refrigeration activities (chilling or freezing, storage, transport) according to product type and region (Meknes, Casablanca, Agadir), are discussed together with the applied technology (direct expansion or secondary refrigerant). The main aspects of the Montreal and Copenhagen Protocols as well as demands which remain to be satisfied, especially in the fishing ports, are indicated.
