This publication includes five papers on various aspects of food preservation and packaging: the use of packaging in food preservation; measurement of the permeability of packaging materials; temperature control in the food distribution system; hazard analysis in food processing and preservation; post-harvest physiology. These papers were presented at the 1st Agrofood Symposium on "Food preservation, technologies and packaging", held in Casablanca, Morocco, in April 1992.
