Summary
The author describes the market of refrigerated food in the Netherlands and the use of models. The newest branch, predictive microbiology, is linked to the classic model of time-temperature-tolerance. Usage of uniform models and definitions for the integral discipline would increase acceptance at operational and managerial levels. Exponential models offer the necessary basis for understanding the processes of quality change and heat transfer in cold chains.
