Summary

Preventing food poisoning requires first of all a good cold chain, but that is not all that is necessary. Disinfection of food-contact surfaces, precise case-by-case analysis of the time-temperature relationship, particularly during interfaces, judicious determination of, and adherence to, the expiration date are basic parameters in evaluating a logistics system from the viewpoint of food safety.
