How the notion of food safety has changed, and how that affects the choice of a logistics system.
Evolution de la notion de sécurité alimentaire : application au choix d'un système logistique.
Author(s) : AUROI P.
Type of article: Article
Summary
Preventing food poisoning requires first of all a good cold chain, but that is not all that is necessary. Disinfection of food-contact surfaces, precise case-by-case analysis of the time-temperature relationship, particularly during interfaces, judicious determination of, and adherence to, the expiration date are basic parameters in evaluating a logistics system from the viewpoint of food safety.
