Summary
The temperature history system which measures and records the temperature of food is required in storage and distribution of food. The K value and met % of a quality index of fish can be expressed as a function of temperature. Therefore, it is possible to presume quality change of a fish by measuring the temperature history during storage of fish. The system, which presumes quality from this temperature history is applicable to a traceability system.
