Summary
In recent years a growing concern about the quality of stored sweet potatoes has prompted a re-examination of current storage practices. A sweet potato curing and storage facility utilizing horizontal ventilation, a design widely used in Europe, was built in Eastern North Carolina. Analysis of the first year's data showed encouraging results. In general, the variation in temperature between any 2 points in the room was less than 1 K. This suggests the possibility of significant improvements in the quality of sweet potatoes due to the precise control of the environmental storage conditions.
