Summary
A forced-air precooler to cool fresh spinach rapidly in large bins was tested. Air flow, spinach mass and cooling time were measured. The time required to reduce the initial product temperature to seven eighths of the desired holding temperature for 10 tests was 3.92 h. A comparison of air flow rates and cooling time was made.
