Summary
Three components, polyacrylic acid (sodium salt), potassium carbonate and silica gel, were selected for formulating humidity-controlling agents, such that the relative humidity within a sealed food package could be maintained within the range of 44 and 87%. A storage study with pak-choi leaves demonstrated that an humidity-controlling agent composed of polyacrylic acid (sodium salt), K2CO3 and silica gel (0.2 g of each), could be used to maintain the relative humidity in the polyethylene bags at approximately 87% at 25 °C; shelf life was also extended.
