Summary

THE RESULTS OF A TEST STUDY OF FREEZE-DRYING OF BEEF STUFFING AT THE ATMOSPHERIC PRESSURE ARE REPORTED. DATA ARE GIVEN ON THE QUALITY CHARACTERISTICS OF THE STUFFING DEHYDRATED BY THIS FREEZE-DRYING PROCESS. A COMPARATIVE ANALYSIS IS GIVEN FOR THE WATER INTAKE COEFFICIENTS AND THE WATER RETENTION CAPACITY OF RAW MATERIALS AND OF THE STUFFING DEHYDRATED BY FREEZE-DRYING UNDER VACUUM AND AT THE ATMOSPHERIC PRESSURE.
