Summary
Applicability of freeze concentration for shochu waste treatment is considered in this article. Shochu waste was effectively concentrated using a freezing and thawing method. During the thawing process, cold heat obtained from ice was used to remove fermentation heat from the shochu production process. Since melted ice contains little COD components, it could be used as a source of nitrogen, vitamin and other nutrients for any fermentation such as lactic acid production. This could introduce a zero-emission system to the shochu industry.
