AFTER RECALLING THE FUNDAMENTAL IDEAS OF FREEZING AND QUICK FREEZING, THE BASIC RULES RELATED TO THESE OPERATIONS ARE PRESENTED: DEFINITION OF OBLIGATORY HYGIENE CONDITIONS, AND STANDARDS FOR THE MATERIALSUSED AND SELECTED AS A FUNCTION OF THE MASS OF THE PORTIONS TO BE FROZEN, OF THE PRESCRIBED TEMPERATURE AND OF THE FREEZING VELOCITY. THE INSTALLATIONS HAVE TO BE REGISTERED AND THE CAPACITY HAS TO BE CERTIFIED. THE HYGIENE AND UTILIZATION CONDITIONS ARE SPECIFIED, AND THE DURATION OF STORAGE HAS TO BE FIXED. THE MEASURES TO BE TAKEN IN CASE OF FAILURE ARE INDICATED AS WELL AS THE MEANS OF DETECTING THE DETERIORATION LIKELY TO RESULT FROM IT. J.L.
