Freezing of dispersed media: modelling the connection between heat and mass transfer and interface phenomena.

Congélation des milieux dispersés : modélisation du couplage entre les transferts de chaleur et de masse et les phénomènes d'interface.

Summary

As part of research done on the freezing of fine-textured dispersed media, a general discussion of the problem is presented. The complexity of the modelling of the connection between the different basic phenomena (heat transfer, mass transfer, behaviour of interfaces and mechanical behaviour of substrate) is highlighted. The authors present the approach that they used to develop the model, which included the thermodynamics of the ice-water interface, the porometric distribution of the materials studied and the heat and mass diffusion equations.
