Freezing time for foodstuffs.


An analytical method of solving the Stefan problem is suggested. This method makes it possible to obtain correct and simple formulae for the freezing times of foodstuffs having the shape of a sphere and a cylinder. These equations improve the Plank's formula to take into account the heat capacity of the frozen part and the real initial temperature.
