Summary

THE EFFECT OF FREEZING CV MALLING PROMISE RASPBERRIES IN DIFFERENT RETAIL PACKAGES ON FRUIT QUALITY WAS INVESTIGATED IN TWO SUCCESSIVE SEASONS. BULK FREEZING WAS TAKEN AS A STANDARD. THE QUALITY OF FROZEN RASPBERRIES WAS DETERMINED BY THE PERCENTAGE OF BROKEN BERRIES, DRAINED WEIGHT AND ORGANOLEPTIC PROPERTIES. RASPBERRIES FROZEN IN SMALLER PACKAGES (UP TO 500 G) WERE CHARACTERIZED BY A SMALLER PERCENTAGE OF BROKEN BERRIES THAN BULK FROZEN. MOREOVER, THE DRAINED WEIGHT WAS HIGHER. IN ONE OF THE SEASONS FRUIT FREEZING IN RETAIL PACKAGES POSITIVELY INFLUENCED THEIR ORGANOLEPTIC QUALITY. RESULTS CONCLUDE THAT THERE IS A POSITIVE EFFECT OF FREEZING RASPBERRIES IN RETAIL PACKAGES ON FROZEN FRUIT QUALITY.
