Summary
In the first part of the article, the general food resources of the sea are presented. The composition and properties of fish as well as the reasons underlying limitation of the keeping quality are discussed. The aspects of suitability of fish for freezing are presented. In the second part of the paper the techniques of fish freezing are presented. The industrial techniques of freezing and freezing apparatuses are presented in this part. Special attention is paid to techniques applied in fishing vessels along with technological aspects of the freezing process.
