A model for prediction of heat transfer-controlled cooling and freezing: a comparison between computational values and experimental results.

Summary

Prediction of heat transfer-controlled cooling and freezing times is very important for a good preservation of foodstuffs. In that regard, the authors used a computer code based on the finite-element method (FEM) that allows one to analyse phase changing of various foodstuffs. Therefore, using such code, it is possible to predict process times and it is also possible to design and realise plants in a most efficient way. The authors present a comparison between the results determined with the FEM program and the experimental values given in technical literature.
