Summary

Fresh food specialist stores first appeared in the Paris area a few years ago and have expanded fast, in the Paris area and elsewhere. These stores, usually with a floor area of 500 to 1000 m2, are usually set up by independent retailers. These retailers are now forming distribution companies and are out to conquer the whole country. Their concepts, positioning and strategies may differ, but they all have a common denominator: quality. Their staff is also top-priority.
