Summary
FROM THE FRENCH STATISTICS FOR 1978 TO 1982 IT APPEARS THAT THE CONSUMPTION OF FROZEN FISH FILLETS INCREASED BY 4% PER YEAR, THAT OF BREADED FILLETS BY 3% AND THAT OF PRECOOKED FISH FOODS BY 23%, WHEREAS THAT OF WHOLE FISH DECREASED BY 10%. THE AUTHOR DIFFERENTIATES THE FILLETS FOR INDUSTRIAL PROCESSING AND THOSE FOR DIRECT CONSUMPTION WITH THE LIST OF THE MAIN SPECIES CONSUMED. THE QUALITY CRITERIA OF FROZEN FISH FILLETS (NUTRIENT AND MICROBIOLOGICAL PROPERTIES), THE SERVICE THEY BRING TO USERS AND THE ECONOMY OF FISH MARKET ARE LISTED. G.G.
