Summary

Production of packaged quick-frozen foods is increasing every year in Japan. In 1992, 1,202,613 tons with a value of 657,690 million yen were produced, including prepared foods such as breaded shrimps and prawns, potato croquettes, meat balls, hamburgers, Gyoza, Shümai, Harumaki, etc. In the paper, the latest machines used for production of packaged quick-frozen foods are described.
