THESE PRODUCTS INCLUDE THREE KINDS: MADE OF WHOLE POTATOES (CHIPS, RISSOLEES), OF MASHED POTATOES OR POTATO FLAKES (DAUPHINE, NOISETTES, CROQUETTES) AND OF GRATED POTATOES. IN FRANCE, NATIONAL PRODUCTION REACHED 87,857 T IN 1982, INCLUDING 64,685 T CHIPS AND IS INCREASINGLY DEVELOPING BOTH IN CATERING AND HOUSEHOLDS. THE FOREIGN TRADE SHOWED A FAVOURABLE TREND: 56% INCREASE IN EXPORTS AND 20% DECREASE IN IMPORTS. THE QUALITY OF THESE PRODUCTS, THE PROCESSING AND USE OF WHICH ARE DESCRIBED, IS QUITE SATISFACTORY.
