Summary

Italian legislative regulations on the implementation of EEC directives, both on frozen foods for human nutrition and on the sanitary rules for the production and marketing of seafood, are reviewed and discussed. It is concluded that frozen seafood is among the best foods on the market from the hygienic, nutritional and technical point of view. A.P.
