Summary

THE TESTS WERE CARRIED OUT ON CHANGES IN THE MUSCLE PROTEINS, ESTIMATED BY THE ELECTROPHORETIC PROCEDURE, OF THREE FISH SPECIES (SOLE, COD, MACKEREL) SUBJECTED TO FOUR IRRADIATION DOSES (0.5, 1, 1.5 AND 2 MEGARAD). THESE RESULTS SHOW A CHANGE IN THE PROTEIN PATTERN, THAT CAN BE INTERPRETED AS THE BREAKDOWN OF SOME PROTEINS. IT IS NECESSARY TO QUANTIFY THESE RESULTS, SO THAT THIS BREAKDOWN MAY BE USED AS AN IRRADIATION TRACER. RESERVATIONS SHOULD BE MADE ABOUT TEST CONDITIONS RELATIVELY FAR FROM THE INDUSTRIAL APPLICATION OF FISH IRRADIATION, ESPECIALLY ON SUBSEQUENT COLD CHAIN. G.G.
