FRESH COD FILLETS REPRESENT ALMOST 40% OF THE VOLUME OF LANDINGS ON THE ATLANTIC COAST OF CANADA, AND ARE EDIBLE ONLY FOR 8 TO 10 DAYS AFTER CATCHING. IONIZATION OF COD FILLETS EXTENDS THE SHELF LIFE OF FISH, AND THIS TREATMENT DOES NOT REQUIRE MAJOR CHANGES IN FISHING, PROCESSING OR DISTRIBUTION ACTIVITIES AND EQUIPMENT. THE BACTERIAL SPECIES FOUND IN COD FILLETSWERE ISOLATED, IDENTIFIED AND CHARACTERIZED ACCORDING TO THEIR RADIORESISTANCE. THEN, FILLET PORTIONS STORED IN POLYETHYLENE BAGS WERE GIVEN IONIZING TREATMENT, WITH A MINIMUM QUANTITY OF AIR, AT TEMPERATURES VARYING BETWEEN 273 AND 283 K (0 AND 10 DEG C). UNDER SUCH CONDITIONS, A 2-KILOGRAY DOSE GAVE THE OPTIMUM SHELF LIFE, AND SAMPLES COULD BE STORED FOR ALMOST 14 DAYS AT 277 K (4 DEG C), WITHIN 1 K ; IN COMPARISON THE SHELF LIFE OF CONTROL SAMPLES WAS LESS THAN 7 DAYS.
