THE AUTHOR SUGGESTS A GENERALIZED ANALYTICAL DEPENDENCE FOR THE SPECIFIC THERMAL CAPACITY AS A FUNCTION OF MOISTURE CONTENT ; THIS DEPENDENCE IS A BASIC PARAMETER FOR REFRIGERATION CONSUMPTION. BESIDES, AS A RESULT OF INVESTIGATIONS ON THERMAL PROCESSES IN FREEZING, THE AUTHOR HAS DEFINED A GENERALIZED ANALYTICAL DEPENDENCE FOR THE CONSUMPTION OF COLD IN COOLING AND FREEZING OF FOODSTUFFS. FOR THIS PURPOSE, A CORRESPONDING UNIVERSAL ENTHALPY CHART HAS BEEN DEVELOPED.
