Summary

Measurement of growth and latent period of these bacteria inoculated in vacuum-packaged salmon, or in salmon stored in aerobic conditions and incubated at 5 and 10 deg C. L. monocytogenes grew in all tested conditions, whereas growth of A. hydrophila occurred only at 10 deg C. The results suggest that L. monocytogenes develops in vacuum-packaged and refrigerated smoked salmon.
