This document is Part 1 in the series “Guidance for the control of Listeria monocytogenes in ready-to-eat foods” and provides the general principles relating to the control of Listeria monocytogenes in the production of RTE foods. This guide should be used in conjunction with the other documents in the series to provide an overall strategy for managing Listeria in a RTE food operation. It explains why control measures for Listeria should be put in place and how they should be applied. It also describes how the control measures applied depend on the particular type of RTE foods, the production process and the processing environment.
