Summary

The globalisation of the market in fruits, vegetables and flowers has increased the demand for year-round supply of the entire range of these products to markets throughout the world. These considerations have led to increasing interest in sea transport of a wide range of perishable crops under controlled atmosphere conditions. This guide contains a description of the biological basis of controlled-atmosphere storage, an outline of the techniques used to provide the appropriate atmospheres, and a description of modified atmosphere packaging, a technology that provides an additional alternative for transport and storage of some crops. Recommendations for more than 50 individual commodities are given.
