Summary

World fish production averages 100 million tons, of which more than one third is marketed internationally, mainly as frozen fish (40%). Quality assurance of frozen fish is necessary to ensure safety and consumer protection from fraudulous practices. The communication discusses ways and means to assure quality of frozen seafood using the approach of hazard analysis and critical control points.
