STUDIES WERE MADE ON A SPECIALLY ELABORATED TEST RIG AND QUANTITATIVE VALUES FOR THE BASIC CHARACTERISTICS OF THE HEAT EXCHANGE PROCESS WERE OBTAINED AS A FUNCTION OF LIQUID NITROGEN CONSUMPTION WHEN USING A THREE-ZONE NITROGEN SYSTEM FOR THE FREEZING OF SEMI-PREPARED MEAT PRODUCTS. THE PARAMETERS OBTAINED FOR THE PROCESS CAN BE USED FOR ENGINEERING CALCULATIONS FOR QUICK-FREEZERS OF THIS TYPE.
