ANALYSIS OF THE PROTEOLYTIC ACTIVITY OF 143 BACTERIA ISOLATES, INCLUDING PSEUDOMONAS FLUORESCENS, ACHROMOBACTER XYLOSOXYDANS, ACINETOBACTER LWOFFII, ACROMONAS HYDROPHILA AND ENTEROCOCCI. THE HIGHEST ACTIVITY IS OBSERVED IN PSEUDOMONADS. ALL EXCRETED PROTEASES ARE HEAT-STABLE, 353 TO 373 K (80 TO 100 DEG C) ; THEY ARE RESPONSIBLE FOR UHT MILK GELLING ON STORAGE.
