Summary

A CHAIN IS ONLY AS STRONG AS ITS WEAKEST LINK. A COMPARISON O THE FROZEN-FOOD CONSUMPTION RATE IN CZECHOSLOVAKIA (5-6 KG PER CAPITA YEARLY, NOT INCLUDING FROZEN POULTRY AND ICE CREAM, WITH A PERSPECTIVE OF UP TO 10 KG IN 1995) WITH THE IMPLEMENTATION OF INDIVIDUAL LINKS OF THE FREEZING CHAIN REVEALED THAT THE PROCESSING AND STORAGE CAPACITIES OF COLD STORES AND THEIR REFRIGERATED TRANSPORT FACILITIES WERE ALMOST SUFFICIENT TO MASTER THE CURRENT AND PERSPECTIVE FROZEN-FOOD TURNOVER. ALSO PROMISING IS THE RATE OF EQUIPPING HOUSEHOLDS WITH HOME FREEZERS. THE WEAKEST LINK, HOWEVER, IS COMMERCIAL REFRIGERATION, INCLUDING FROZEN-FOOD STORAGE CAPACITIES IN INSTITUTIONAL CATERING. THIS PROBLEM DESERVES SPECIAL ATTENTION AND EFFORT IN DOING AWAY WITH SERIOUS EXISTING DISPROPORTIONS.
