Summary

The influence of hydrocooling on rot development, ripeness and weight loss of "Stark Redgold" nectarine were evaluated in comparison to air precooling in a cold room. Hydrocooling resulted in lower weight loss, but it gave rise to higher rot development due to Rhizopus and Penicillium spp postharvest infections. Hydrocooling is therefore not advisable for nectarines, because the advantage of lower weight loss does not counterbalance the greater rot damage. A.P.
