THE LIPID COMPOSITION AND LIPOLYSIS OF SARDINES WITH VARIOUS OIL CONTENTS DURING STORAGE AT 253 K (-20 DEG C) WERE STUDIED BY THIN FILM CHROMATOGRAPHY. THE PHOSPHOLIPID CONTENT IS THE SAME IN SARDINECAUGHT AT TWO DIFFERENT PERIODS OF THE YEAR (< FATNESS PERIOD > AND < LEANNESS PERIOD >), WHEREAS THE NEUTRAL LIPID COMPOSITION IS HIGHER IN < FATNESS PHOSPHOLIPIDS ARE HYDROLYZED MORE RAPIDLY THAN NEUTRAL LIPIDS.
