Summary
Ice beer is a new, milder type of beer produced through a new process. The main difference in the process is based on the freeze concentration of liquid. The major elements of freeze concentration are: the scraped heat exchanger for the production of ice crystals, the recrystalliser for the growth of the crystals and the washtank for separation of the crystals and concentrate. A development that reduces the effects of the higher viscosity concentrate in the three-stage, counterflow installation is highlighted.
