THE IMPROVEMENT IN TENDERNESS OF BEEF DURINGAGING IS RELATED TO DEGRADATION OF DESMIN. THIS PROTEIN IS LOCATED IN THE NETWORK SURROUNDING THE Z-DISC OF THE MYOFRIBRILS. THE CONCENTRATION OF DESMIN DEGRADATION PRODUCTS IN POTASSIUM-IODINE EXTRACTS OF MYOFIBRILS IS DETERMINED. THE DIFFERENCE IN CONCENTRATION OF THE DEGRADATION PRODUCTS BETWEEN FRESH SLAUGHTERED AND AGED MEAT IS USED AS AN IMMUNOLOGICAL AGING INDEX.
